Cocoa-Amaretti Cookies

Preheat the oven to 350°F. Butter two cookie sheets.

Mix the sugar, almonds, cornstarch, egg whites, cocoa, and salt in a large bowl until well blended. Drop heaping teaspoons of the dough 1 inch apart onto the prepared cookie sheets.

Bake for 10-12 minutes, or until firm to the touch, rotating the sheets halfway through for even baking. Transfer to racks and let cool completely.
