Chocolate Mint Brownie Cookies

ingredients
1 1/2 cup firmly packad light brown sugar
2/3 cup shortening
1 tablespoon water
1 tablespoon vanilla extract
1/2 teaspoon peppermint extract
2 eggs
1 1/2 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon salt
1/4 teaspoon baking soda
2 cups mint chocolate chips
directions
Heat oven to 375 degrees F. Place sheets of foil on counter top for cooling cookies.
Combine brown sugar, shortening, water, vanilla and peppermint extract in a large bowl. Beat at medium speed of an electric mixer until well blended. Add eggs, mixing mix well.
Combine flour, cocoa, salt and baking soda in a medium bowl. Add to shortening mixture and beat at low speed just until blended. Stir in mint chocolate chips.
Drop dough by rounded measuring tablespoonfuls 2 inches apart onto ungreased cookie sheets. Bake 1 baking sheet at a time at 375 degrees F for 7-9 minutes or until cookies are set. Do not over bake.
Cool for 2 minutes on cookie sheet. Remove cookies to foil to cool completely.
