Herb-Roasted Eye Of The Round Roast

ingredients
2 1/2 pounds eye of the round roast, room temperature
2 teaspoons olive oil
1 teaspoon oregano
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
directions
Preheat oven to 500 degrees F.
Rub roast all over with oil. Combine oregano, paprika, garlic powder, and pepper and rub on both sides of meat.
Place meat in baking pan and roast for 30 minutes.
Then add 1 cup water, reduce temperature to 275 degrees F, and roast for an additional 45 minutes to 60 minutes, or until meat thermometer registers 155 degrees F. This will produce a medium doneness.
Remove from oven and let sit covered with foil for 15 minutes before carving to allow juices to settle (internal temperature will rise 5 degrees F).
