Crock pots/slow cookers all heat differently. There is no standard among manufacturers. Cooking times are suggested guidelines based on our testing. Please adjust cooking times and temps to work with your brand and model of slow cooker.

recipe tips

For added flavor, sear the roast in a hot skillet before baking in the oven.

Add fresh herbs like rosemary and thyme to the crock pot for extra flavor.

Taste the roast before adding extra salt. The soup and bouillon cubes contain a fair amount of sodium.

To prevent the roast from drying out, make sure the lid is securely on the crock pot.

For a thicker gravy, remove the roast from the crock pot and simmer the liquid on the stove to reduce and thicken before serving.

Try adding chopped garlic or extra onions to the soup mixture for added flavor.

Try different types of beer or whiskey to change the taste of the roast.

Let the roast rest for 10-15 minutes before slicing to allow the juices to redistribute and keep the meat moist.

common recipe questions

What cut of beef is best for making this roast?

Chuck roast is ideal for this recipe as it cooks low and slow, becoming tender and flavorful. You can also use top or bottom round in place of chuck.

Why is the roast baked in the oven before slow cooking in the crock pot?

Baking the roast in the oven first helps to brown and caramelize the outside, adding flavor and texture to the final dish.

Can I use a different type of alcohol instead of whiskey?

You can substitute whiskey with red wine, or apple cider or beef broth for non-alcoholic substitutes.

What can I use as a non-alcoholic substitute for the beer?

You can use beef broth, mushroom broth, or a combination of Worcestershire sauce and water for a non-alcoholic option.

Can I add vegetables to cook with the roast in the crock pot?

Yes, root vegetables like carrots, potatoes, and onions can be added without other adjustments to the recipe.

How do I know when the roast is done cooking?

The roast is done when it can be easily pierced with a fork and falls apart easily.

How should I store leftovers?

Store leftover roast beef in an airtight container in the refrigerator for up to 3-4 days. Reheat in the oven or microwave.

Can I freeze the leftovers?

Yes, the cooked roast beef can be frozen in an airtight container for up to 2-3 months. Thaw in the refrigerator before reheating.
