Pinto Bean Dip
INGREDIENTS:
1 can (15 ounce size) pinto beans, rinsed and drained
1/2 sweet red pepper, finely chopped
1 stalk celery, finely chopped
1 small onion, finely chopped
2 cloves garlic, minced
2 tablespoons cider vinegar
1 teaspoon freshly squeezed lemon juice
1 teaspoon dried oregano
1/2 teaspoon ground cumin
ground black pepper and/or salt, to taste
DIRECTIONS:
Place the beans into a blender or food processor. Process to a chunky puree.
Add the remaining ingredients and pulse once or twice to combine. May be served cold or warm.
