ingredients

3 cups cooked chicken, chopped
1 small onion, chopped
1 tablespoon soy sauce
1 can (8- to 10 ounce size) chicken broth
1 small can pineapple chunks with juice
white rice

directions

Heat small amount of cooking oil in frying pan. Cook chopped onion until soft and slightly brown. Place the chicken in frying pan and cook for 5 minutes, stirring occasionally.

Combine the chicken broth and pineapple chunks in a separate saucepan and heat until simmering.

Add the chicken, onions, and soy sauce to the sauce pan. Simmer until the sauce is reduced, about 15 minutes. Serve over rice.
