ingredients
1 package (10 ounce size) frozen chopped spinach, partially-thawed
1/2 teaspoon salt
1 dash black pepper
1 teaspoon lemon juice
1 1/4 cup diced cooked chicken
1 ounce shredded cheese (cheddar, mozzarella, swiss, monterey jack - your choice)
1 dash paprika
directions
Preheat the oven to 350 degrees F.
Spread the partially-thawed spinach in the bottom of a 1-quart casserole. Season it with the salt and pepper and sprinkle it evenly with the lemon juice.
Layer the chicken evenly over the spinach. Sprinkle with the grated cheese and paprika.
Place the dish in the oven and bake at 350 degrees F for 20 minutes or until the cheese is melted and the spinach is heated through.
Serve hot.
