Dig into creamy layers of fresh broccoli and tender chicken cubes. Topped with melted cheddar and crispy breadcrumbs, this dish offers a delightful mix of textures and flavors.

serves/makes:

ready in:
  30-60 minutes

ingredients

2 packages (10 ounce size) thawed frozen broccoli florets (or fresh)
6 boneless, skinless chicken breast halves, cooked and cubed
2 cans (10 ounce size) cream of chicken & mushroom soup
1 cup mayonnaise
1 teaspoon lemon juice
1 cup freshly shredded Cheddar cheese
1/2 cup bread crumbs

directions

Preheat the oven to 350 degrees F.

Cook the broccoli as directed on the package (or if using fresh, steam until tender). Drain the broccoli well and place it in the bottom of a 9x13-inch baking dish.

Evenly spread the cubed chicken over the broccoli.

Combine the cream of chicken soup, mayonnaise, and lemon juice in a bowl and mix until smooth. Spread the mayonnaise mixture evenly over the chicken and broccoli.

Sprinkle the Cheddar cheese and breadcrumbs over the top of the mayonnaise.

Place the baking dish in the oven and bake at 350 degrees F for 25 minutes or until bubbly.

Remove the baking dish from the oven and let cool for 5 minutes before serving.

recipe tips

For extra flavor, add garlic powder, onion powder, or dried herbs to the mayonnaise mixture.

Make sure the chicken is cooked through and tender before assembling the casserole.

To make it a complete meal, consider adding cooked pasta or rice to the layers.

Top the dish with crispy bacon crumbles for an added savory touch.

common recipe questions

Is there a substitute for cream of chicken & mushroom soup?

You can use cream of chicken soup or cream of mushroom soup separately, depending on your preference.

Can I use a different type of cheese instead of Cheddar?

You can use different cheeses like mozzarella, Swiss, or Gruyere.

Is it possible to prepare this dish ahead of time?

You can assemble the casserole ahead of time and refrigerate it. Just bake it when you're ready to serve.

Can leftovers be reheated?

Leftovers can be reheated in the oven or microwave until warmed through.

How should I store leftovers?

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Can I freeze this dish?

You can freeze the casserole before baking. Thaw overnight in the refrigerator before baking as directed. Normally, mayonnaise doesn't freeze well but since it's mixed with the soup it shouldn't separate when reheated

tools needed

9x13-inch Baking Dish: For assembling and baking the chicken mayonnaise casserole.

Large Bowl: For mixing the mayonnaise, cream of chicken soup, and lemon juice together until smooth.

Measuring Cups and Spoons: For accurately measuring out ingredients like mayonnaise, lemon juice, breadcrumbs, and shredded Cheddar cheese.

Oven Mitts: Unless you have asbestos hands, oven mitts (or at least a kitchen towel) are needed to safely remove the hot baking dish from the oven. Safety first, folks!

Spatula: Helpful for evenly spreading the mayonnaise mixture over the chicken and broccoli in the baking dish.

Sharp Knife: For cubing the cooked chicken breast halves before adding them to the casserole.

Cheese Grater: To shred the cheese to sprinkle over the casserole.

what goes with it?

Artisanal Garlic Bread: the bold, garlicky flavors will add an extra kick to the creamy and cheesy dish, creating a tasty contrast.

Crisp Garden Salad: the fresh greens and veggies will provide a nice, light balance to the rich and creamy chicken and broccoli casserole.

Garlic Mashed Potatoes: the creamy richness of the mashed potatoes will complement the flavors and textures of the Chicken Mayonnaise perfectly.

beverage pairings

Wine Pairings
Chardonnay: Your trusty chardonnay can step up to the plate here. Its buttery notes will complement the creamy layers of this dish, while the oakiness can play off the Cheddar and breadcrumbs. Look for one with a hint of citrus to cut through the richness.

Sauvignon Blanc: Need something with a bit more zing? A crisp sauvignon blanc can bring a burst of freshness to the party. Its grassy and herbal notes will lift up the dish, balancing the creaminess of the chicken and mayonnaise.

Merlot: If you're feeling a red, a smooth merlot could be a nice option. Its fruit-forward flavors, like black cherry and plum, can enhance the chicken while the soft tannins won't clash with the creamy texture of the dish.

Other Alcohol Pairings
Hard Cider: An apple-y, bubbly hard cider can add a touch of sweetness to contrast the savory elements.

IPA: Looking for something bold and hoppy? An IPA with citrus and pine notes can cut through the richness of the dish.

Moscow Mule: A Moscow Mule could be a fun pick here. The spiciness of the ginger beer can complement the flavors in the dish, while the copper mug adds a touch of pizzazz to your meal.

Non-Alcoholic Pairings
Iced Tea: Keep things simple and refreshing with a classic iced tea. The slightly bitter notes can balance out the richness of the dish.

Sparkling Water: If you want something fizzy but not sweet, opt for some sparkling water. The bubbles can refresh your taste buds, while the neutral flavor won't overpower the flavors of the creamy chicken and broccoli.

Lemonade: A glass of cold lemonade can add a zesty kick to the meal. The tartness can cut through the richness of the mayonnaise and cheese, providing a nice contrast to the flavors.
