ingredients
1 tablespoon olive oil
3 cloves garlic, minced
1 pound boneless skinless chicken breasts, cubed
1 medium zucchini, cubed
2 medium tomatoes, cubed
1 tablespoon dried basil
2 tablespoons vinegar
1/4 teaspoon black pepper
directions
Heat oil in a skillet, saute garlic. Add chicken and cook until no longer pink, set aside. Combine zucchini, tomato, basil and vinegar.
Toss coat vegetables well. Add to skillet and stir-fry about 3-5 minutes. Return chicken to skillet and heat through. Serve over rice or pasta.

Simple, quick, and tasty. This is a great recipe that can be as is or anyone could add their own spices for additional flavor. A great quick dinner with leftover chicken. I added in a few other vegetables because I was trying to use all my fresh veggies before they spoiled and served it over leftover brown rice mixed with wheat spaghetti (also leftovers). My husband liked it and we made tacos with the same mixture the next day.
