2 medium tomatoes, seeded and diced
1 cup cucumber, seeded and chopped
1/2 cup garbanzo beans, cooked
1 cup parsley, chopped
DRESSING
3/4 cup olive oil
1/2 cup fresh lemon juice
2 cloves minced garlic
1 teaspoon Dijon mustard
1 teaspoon ground coriander
1 teaspoon salt
1 freshly ground black pepper
directions
Mix all salad ingredients together and toss with the salad dressing.
