Chatpati Channa Chaat

ingredients
1 cup channa
1/2 cup chopped cucumber
1/2 cup chopped tomatoes
1/2 cup chopped spring onion
1/2 cup (optional) cabbage (shredded)
2 teaspoons chat masala
2 teaspoons lemon juice
1/2 cup (optional) capsicum
1 tablespoon salad oil or olive oil (can be made without oil also)
2 finely chopped green chiles
salt, to taste
directions
Soak channa overnight, then tie them in a soft cotton cloth for 9 to 10 hrs. Keep it at a warm place.
Pressure cook the channa till done (approx 5 to 6 whistles) then place all the chopped vegetables (cucumber, tomatoes, spring onion, cabbage,capsicum) together. Drain out the water from channa.
Mix all the ingredients i.e. channa, chopped vegetables, chat masala, lemon,oil and salt. Refrigerate the salad for about an hour to enjoy the mouth watering recipe to the fullest.

If you are not a strict vegetarian you might like to add 4 boiled eggs quartered. It is very quick to make. You can vary all sorts of things. I've added cold boiled potatoes in the past.
