1 cup cracked bulgur wheat 2 1/2 cups chopped parsley 2 cups chopped tomatoes 1 tablespoon chopped fresh mint 1 teaspoon salt 1/2 teaspoon black pepper 1/2 cup lemon juice (or to taste) 3/4 cup salad oil
directions
Rinse and drain wheat. Add remaining ingredients and mix well.
Let sit 4 hours before serving.
This salad keeps refrigerated for several days.
