ingredients
1 pound baby carrots
1/4 cup golden raisins
1/4 cup butter or margarine
3 tablespoons honey
1 tablespoon lemon juice
1/4 teaspoon ground ginger
1/4 cup sliced almonds
directions
Cook carrots, covered in 1/2 inch boiling water for 8 minutes, drain.
Turn carrots into a one quart baking dish. Stir in raisins, butter, honey, lemon and ginger. Bake uncovered at 375 degrees F for 35 minutes; stir occasionally.
Spoon into serving bowl. Sprinkle with almonds.
