Easy, peasy? More like easy carrots! Butter, sugar, and carrots are all you need for this classic side dish. Once you make it the first time you'll keep coming back whenever you're in a pinch.

1 can (15 ounce size) sliced carrots, well drained
1/2 cup granulated sugar
1/4 cup butter
Combine the carrots, sugar, and butter in a microwave-safe dish.
Cover the dish loosely and microwave on high power for 3 minutes. Stir. If the sugar isn't dissolved, microwave for 30 second intervals, stirring well after each one.
Let the carrots stand for 5-10 minutes before serving.

I normally make a simple butter and brown sugar glaze for carrots at thanksgiving. There I was on Thanksgiving day only to find out I had no brown sugar. Did a quick online search to see what else I could make and ended up here. This recipe saved the day. Didn't know you could do it with white sugar. Now I do!
