ingredients

3 pounds carrots
1 pint mayonnaise
3 egg yolks
1 dash dry mustard
1 dash Worcestershire sauce
salt and pepper, to taste

directions

Pare, then cook carrots until tender. Put them into the blender with 1 inch of water at the base. Blend until pureed. Place the mixture into a butter 9 x 13 inch baking dish.

Bake at 350 degrees F until they are almost dry.

Mix remaining ingredients. Spread this mixture over the carrots. Bake again at 425 degrees F for 15 minutes or until brown.
