ingredients
1/2 cup margarine, softenend
1/4 cup butter, softened
1/2 cup brown sugar
1 egg, beaten
1 1/4 cup flour
1 teaspoon baking soda
1 pinch salt
1 teaspoon lemon juice
1 tablespoon water
1 cup grated raw carrot, heaping
directions
Preheat oven to 350 degrees F. Grease baking ring.
Cream margarine and butter with brown sugar. Add the beaten egg.
Sift dry ingredients and add to egg mixture, then add remaining ingredients. Mix until thoroughly combined. Scoop into prepared baking ring.
Bake for 45 minutes, or until carrot ring tests done.
