Delicious recipes for red velvet cakes, cupcakes, and cheesecakes.

A chewy cookie packed with chopped dates and raisins and a hint of cinnamon.
1 cup brown sugar
1/2 cup shortening (not oil)
2 eggs
1 1/2 cup flour
1 teaspoon cinnamon
1 teaspoon baking soda, DISSOLVED IN
1/4 cup boiling water
1 cup dates, chopped
1 cup raisins (and a little more)
Mix the brown sugar and shortening together. Beat in the eggs one at a time. Mix the cinnamon into the flour and mix them into the batter. Add the soda water and mix again. Add the dates and raisins and mix well.
Drop by the tablespoonful (or teaspoon for smaller cookies) onto a greased cookie sheet and bake for 10 minutes at 350 degrees F. They freeze well too.

Finally a cookie with a decent texture! Good chewy cookie, not dry, not tough.
I have been looking for my Grandmothers' cookie recipe for over 20 years. I think this might be it !!!! They sure look the same ..lol No matter - I KNOW they will be excellent just by the ingredients.

These cookies are delicious. I was able to make 3 dozen. They have a moist, chewy texture, and the hint of cinnamon adds a nice touch to the flavour. It could be my oven, but I needed 12 minutes baking time.
