Boiled potatoes and green beans with pan fried bacon and onion are a sure thing for a good home cookin' side dish.

ingredients

4 cups water
1 1/2 teaspoon salt, divided
2 cups fresh green beans, trimmed, cut into 1-inch pieces if desired
4 small new potatoes, scrubbed and quartered
5 slices bacon, cut into 1-inch pieces
1/4 cup chopped onion
1/4 teaspoon black pepper

directions

Bring the water and 1 teaspoon of the salt to a boil in a saucepan over medium-high heat. Add the green beans and potatoes. When the water returns to a boil, reduce the heat to a simmer, cover the pan, and let cook until the potatoes are tender, about 10-12 minutes. Drain well and set aside.

Heat a large skillet over medium-high heat. Add the bacon and onion and cook until the bacon is crisp. Drain off all but 1 tablespoon of the bacon grease. Add the drained beans and potatoes to the skillet and stir to coat them in the bacon and onion mixture.

Season with the remaining salt and pepper. Serve immediately.

For a healthier version, use turkey bacon or reduce the amount of bacon.

Blanch the green beans before adding them to the skillet to give them a brighter color.

Add a splash of apple cider vinegar for a tangy flavor.

    I learned this recipe from my mom. She made this for my father in the 1940's, she just just your regular old potatoes and can string beans.the juice from the canned beans and the starch from the potatoes made a really nice sauce for this one pan side dish.
