1/2 cup butter or margarine 1 package (3.25 ounce size) flaked coconut 1 cup firmly packed light brown sugar 1/2 cup crunchy peanut butter 1/3 cup light cream
directions
The cake you wish to frost will need to be warm and either in, or on, a broiler-safe dish.
Preheat the oven broiler.
Melt the butter in a saucepan over medium heat. When fully melted, remove the pan from the heat and stir in the coconut, brown sugar, peanut butter, and cream. Mix well.
Spread the topping over the still-warm cake. Place the cake 4-6 inches from the broiler and let cook for 1 minute or until the frosting starts to bubble.
Remove from the oven and let the peanut butter coconut frosting cool completely before serving.
