Cherry yogurt is added to whipped egg white to create a fluffy and lightly sweetened frosting.


1 egg white
2 tablespoons cherry yogurt
Add the egg white to a small mixer bowl and beat with a mixer (or egg beater) until soft peaks form.
Fold in the yogurt and continue to beat until fluffy.
Use the frosting immediately. What is frosted must be refrigerated. Works well on an 8x8 cake.

I hadn't thought about this using raw egg but made it and loved it. I think if you use good clean eggs that have been refrigerated and don't sit out then you are ok, at least that's my philosophy. You could vary this with other yogurt flavors super easy because I ended up using strawberrry because I couldn't find cherry and I just needed something with a hint of pink to it.

I used nonfat yogurt and egg white substitute. I don't like using raw egg. The substitute took waaaay longer to whip up and I don't think the end result was as good as using real egg but it worked well enough. I liked the flavor but it just wasn't very fluffy.
