With a light cherry flavor and pretty pink color, this creamy boiled frosting works well on both cakes and cupcakes.
2 egg whites
3/4 cup sugar
2 tablespoons water
1/4 teaspoon cream of tartar
1/3 cup light corn syrup
1/4 teaspoon salt
1/2 teaspoon cherry extract
1/2 teaspoon almond extract
1 drop red food coloring, or more if desired
Add the egg whites, sugar, water, cream of tartar, corn syrup, and salt to the top of a double boiler over boiling water. Beat the mixture with an electric mixer until it forms stiff peaks.
Carefully remove the top of the double boiler and set it on a heat-proof surface. Add the cherry and almond extracts and the food coloring, as desired. Beat with the electric mixer until the cherry frosting is thick and spreadable.

This frosting is really easy, and is a little twist on the classic 7 minute frosting. its perfect for vanilla cupcakes!
