Lighter Clam Chowder Recipe

Ingredients:
2 cups chopped clams
4 cups low fat chicken broth
1/2 cup finely chopped onion
1 medium garlic clove
1 bay leaf
1/4 teaspoon dried thyme
3 celery ribs -- diced
1 large carrot -- finely diced
1 medium potato -- peeled and diced
salt
1 teaspoon freshly ground black pepper
1 tablespoon chopped fresh parsley
Directions:
Combine the clams, broth, onion, garlic, bay leaf, and thyme in a heavy 4-quart saucepan over high heat. When the liquid boils, reduce heat to medium-low, cover, and simmer for 10 minutes.
Add celery, carrot, and potato and cook for about 30 minutes longer. Season with salt and pepper; stir in the parsley just before serving.
