Turkish Yogurt Cookies

ingredients
1/2 cup plain yogurt
1/2 cup butter, softened
1 cup extra-virgin olive oil
2 1/2 cups all-purpose flour
1 large egg yolk, lightly beaten
2 tablespoons honey
directions
Use a wooden spoon to beat the yogurt, butter, and olive oil in a medium bowl until well blended. Mix in the flour to form a soft, smooth dough. Press the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
Preheat the oven to 375 degrees F. Butter a cookie sheet.
Roll out the dough very gently on a lightly floured surface to a thickness of 1/2 inch. Use a 2-inch crescent-shaped cookie cutter to cut out the cookies. Gather the dough scraps, re-roll, and continue cutting out cookies until all the dough is used.
Use a spatula to transfer the cookies to the prepared cookie sheet, placing them 2 inches apart. Brush the tops of the cookies with the beaten egg yolk. Bake for 20-25 minutes, or until just golden. Transfer to racks to cool.
Warm the honey in a small saucepan over very low heat. Drizzle the tops of the cookies with the honey.
