Peanut Crisps Recipe

Serves/Makes: 4 dozen
Ingredients:
1 cup butter or margarine
1 1/2 cup brown sugar, packed
2 eggs, slightly beaten
2 teaspoons vanilla
3 cups flour
1/2 teaspoon baking soda
1 teaspoon salt
2 cups dry roasted salted peanuts
Directions:
Preheat oven to 375.
In large mixing bowl, mix butter, sugar, eggs, and vanilla thoroughly. Blend in flour, baking soda, and salt. Mix in peanuts.
Drop by heaping teaspoonfuls of dough about 2 inches apart on a lightly greased baking sheet. Flatten with bottom of a greased glass dipped in sugar.
Bake 8 to l0 minutes or until golden brown. Remove from oven; let cookies set on cookie sheet for about a minute before removing to cool.
