Lavender Cookies

ingredients
1/2 cup unsalted butter
1 cup sugar
2 eggs
1/2 teaspoon vanilla extract
1 teaspoon dried lavender flowers, finely chopped
1 1/2 cup all-purpose flour
2 teaspoons baking powder
directions
Preheat the oven to 375 degrees F.
In a medium bowl, cream the butter and sugar until light and fluffy. Beat in the eggs, vanilla, and lavender, and mix well. Combine the flour and baking powder and add it to the lavender mixture, stirring until well blended.
Drop by teaspoonfuls onto an ungreased baking sheet. Bake 8 to 10 minutes, or until lightly browned on the edges. Cool on the baking sheet for a minute or two, then transfer to a rack to finish cooling.

My neighbor gave me dried lavendar and I had no idea what to do with it but she said to use it in something baked. The cookies were sooo good and buttery and delicious.

These delicate, buttery cookies were amazing! My family ate them right off the pan and I could barely get any onto the cooling rack. I added a drizzle of lavender icing (confectioner's sugar, lavender, and milk). They spread so much I could only put a few on the pan at a time when cooking, but they were crisp and perfectly browned. A great use of my culinary lavender from the lavender festival in Albuquerque.
