ingredients
1 cup butter
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 teaspoon pure vanilla extract, optional
3 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 cup chopped pecans or black walnuts
directions
Cream butter and sugars, add eggs and mix well. Sift salt and soda with flour, add nuts and mix into first part.
Roll into a round roll, the size of large rolling pin. Wrap in plastic wrap. Put in refrigerator overnight.
Turn out on floured board and slice very thin. Bake in moderate oven 350 degrees F until crisp. Do not brown.
The cookie rolls can remain in icebox for some time and be cut and baked as needed. Cookies keep nicely in jars.
