Frosted Banana Cookies

ingredients
3/4 cup shortening (regular or butter flavor)
3/4 cup brown sugar
1 egg
1/2 teaspoon vanilla extract
1/2 teaspoon banana extract, optional
2 ripe bananas, mashed
1/4 teaspoon salt
1 teaspoon baking soda
2 cups flour
ICING
6 tablespoons brown sugar
4 tablespoons butter
4 tablespoons cream (or evaporated milk)
powdered sugar
1/2 teaspoon vanilla extract
directions
Cream shortening and sugar together. Add egg, vanilla, banana flavoring, bananas, salt, soda and flour. Drop by teaspoon on greased cookie sheet and bake 10 minutes at 350 degrees F.
For icing, combine brown sugar, butter and cream together in a saucepan and bring to a boil. Remove from heat and add powdered sugar to desired consistency. Add vanilla. Frost cooled cookies.

These are just delicious! I added nuts to the cookie dough which gives the cookies a little added interest. Otherwise, I wouldn't change a thing!

The cookies themselves were to me a little bland. The icing really made them tasty though. This is not actually and "icing" recipe though, it is more of a "glaze". Would be good with maple flavoring substituted for the vanilla.

I was looking for a new banana recipe, since I am a stay at home mom, with 3 growing boys, and always seem to have banana's in the house! All the boys loved this recipe! I tweeked the frosting a little, by adding a pinch of nutmeg, a pinch of allspice, and a 1/2 tsp of cinn. I think it made it taste better!

I have been baking a variety of cookies to take to bingo every week, and these have been the biggest hit. All of my friends prefer these over any other cookie that I have ever made. Thanks for such a wonderful recipe.
