Ingredients:
1 1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3 tablespoons unsalted butter
3 tablespoons margarine
1/2 cup sugar
1 whole egg
1/2 teaspoon vanilla

Directions:

Stir together flour, baking powder and salt in a small bowl.

Beat together butter, margarine and sugar in another bowl until creamy. Beat in egg and vanilla until well blended. Stir in flour mixture.

Shape into a disk, wrap in plastic wrap and refrigerate several hours or overnight.

Heat oven to 350 degrees F. Coat baking sheets with nonstick vegetable-oil cooking spray.

Roll out dough on lightly floured surface to 3/8-inch thickness. Cut into rounds with 2 1/2-inch cookie cutter, re-roll scraps. Place on prepared baking sheets, spacing 1 1/2 inches apart.

Bake in 350 degree F oven for 10 to 12 minutes or until lightly browned at edges. Remove cookies to wire rack to cool.
