These sugar cookies are a deliciously sweet treat. These buttery, crispy cookies are perfect for dunking in your morning coffee or enjoying with a scoop of ice cream after dinner.
3/4 cup shortening
1 cup sugar
2 eggs
1/2 teaspoon lemon extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
colored decorating sugar
Combine the shortening and sugar in a large mixing bowl. Beat on medium speed with an electric mixer until smooth. With the mixer running, add the eggs and lemon extract, beating until fully incorporated.
In another bowl, mix together the flour, baking powder, and salt. With the mixer running, slowly add the flour mixture to the egg mixture.
Cover the dough tightly and refrigerate for 2 hours.
Preheat the oven to 400 degrees F. Grease baking sheets.
Turn the dough out onto a lightly floured work surface. Roll the dough to 1/8-inch thick. Cut with cookie cutters as desired. Place the cookies about 1 1/2 inches apart on the greased baking sheets. Sprinkle with the colored sugar.
Place the baking sheets in the oven and bake at 400 degrees F for 7-9 minutes or until they are just starting to brown. Remove from the oven and cool on wire racks. When completely cool, store in an airtight container at room temperature. The cookies also freeze well.
