In Greek mythology, only the gods and goddesses could eat ambrosia as it was meant only for immortals. Don't worry, we mere mortals can definitely indulge in these "ambrosia" cookies.
1 cup butter or margarine, softened
1 cup brown sugar
1/2 cup sugar
1 teaspoon vanilla extract
2 eggs
2 cups flour
1/2 teaspoon salt
2 teaspoons baking powder
2 cups quick-cooking oats
1 package (12 ounce size) chocolate chips
Heat oven to 350 degrees F.
In a large mixing bowl, cream butter and sugar until light and fluffy. Mix in eggs and vanilla. Sift together flour, baking powder and salt. Add to creamed mixture. Blend thoroughly. Stir in quick oats and chocolate chips; mix well.
Drop by tablespoons onto ungreased cookie sheets. Bake 10-12 minutes. Cool one minute before removing from cookie sheet and placing cookies on cooling rack.

I was looking for a soft oatmeal cookie recipe with choc. chips instead of raisins- this is a great one. One thing to note is the cookies are pale; they did't brown much- I overbaked the first batch expecting them to brown. 12 mins was the max for my oven, to keep them soft, and not over-do the bottoms.
