A delicious Cajun-style meal made with smoked sausage, onions, bell pepper, celery, tomatoes, seasonings, and cooked rice.
1 pound smoked sausage, cut in thin slices
1/2 cup chopped onions
1/2 cup chopped bell pepper
1/2 cup chopped celery
1 can (16 ounce size) diced tomatoes, undrained
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
1/2 teaspoon cayenne pepper
2 cups cooked rice
In a large saucepan or skillet, cook the sausage, onion, bell pepper, and celery over medium-high heat until the vegetables are tender.
Stir in the tomatoes, garlic powder, thyme, and cayenne. Let the mixture simmer for 5-10 minutes or until heated through.
Stir in the cooked rice and let heat for 5 more minutes. Serve hot.

Another keeper from CD Kitchen! Three changes: Cajun seasoning in place of those in the recipe,cauliflower rice, and I added a package of okra. Love it! Thanks, CD Kitchen!

Great recipe! After the sliced sausage was in the pan the veggies looked sparse so doubled them, added 2 cups of okra and the diced tomatoes as a reviewer suggested. Added to the spices too - a tablespoon of Cajun seasoning spiced it up. I also lowered the carbs with cauliflower rice. A keeper at 200 calories per cup! Thanks for sharing!

I used leftover cooked rice and the smoked sausage is cooked and just needs to be heated. This dish was ready in about 7 minutes! I used diced tomatoes with green chiles for a little extra flavor but otherwise I made it just as directed.

Hearty and tasty (and easy to prepare). You can vary the flavor depending on the type of sausage you use. If you want more heat, add more cayenne or some crushed red pepper flakes (or use a spicier sausage). If you want it more mild, omit the cayenne pepper and use a mild sausage. You could also use chicken in this recipe, or seafood (just add any seafood at the time you add the rice so it doesn't overcook).
