It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

This jambalaya is everything you want in a last-minute, throw-together meal. Chop up some everyday veggies, throw in some canned tomatoes and beans, and boom. Hot, tasty, and on the table in no time.

2 tablespoons olive oil
1 medium onion, chopped
2 ribs celery, chopped
1 green bell pepper, seeded and chopped
2 cloves garlic, minced
1 pound smoked sausage, sliced on the diagonal into 1/4 inch chunks
1 can black-eyed peas, with liquid
1 can (14 ounce size) diced tomatoes
1 can (14 ounce size) diced tomatoes with green chiles (e.g., Rotel)
1 tablespoon Worcestershire sauce (to taste)

Saute the vegetables in the olive oil in a deep skillet.
When the vegetables are just tender, add the smoked sausage slices, black-eyed peas, tomatoes, and Worcestershire sauce. Let simmer for 15-20 minutes. Serve over hot rice.
NOTE: The black-eyed peas can be substituted with other beans, or omitted entirely.
