ingredients
1 tablespoon butter
1 large onion, chopped
1 green bell pepper, chopped
2 celery stalks, chopped
3 cloves garlic, minced
6 ounces turkey kielbasa, halved and sliced
1 1/2 cup long-grain rice
1 can (28 ounce size) whole peeled tomatoes, broken
1 can fat-free chicken broth
3/4 teaspoon dried thyme
1/4 teaspoon cayenne pepper
1 pound medium shrimp, peeled and deveined
directions
Melt butter in Dutch oven over medium heat. Add the onion, pepper, celery and garlic. Cook stirring until softened, 7-8 minutes.
Add kielbasa and cook 3 minutes longer. Add rice and cook, stirring frequently, until lightly toasted, about 2 minutes. Add the tomatoes and their liquid, the broth, thyme, and cayenne; bring to boil.
Reduce heat and simmer, covered, until rice is tender, about 30 minutes.
Add shrimp to mixture and cook until just opaque in center and all liquid has been absorbed, 5-7 minutes longer.
