1 pound skinless boneless chicken breasts, cut into 1-inch pieces
2 medium zucchini, diced
4 cups low-sodium chicken broth
2 cans (15 ounce size) great Northern beans, rinsed and drained
2 onions, chopped
2 cloves garlic, minced
1 tablespoon ground cumin
1 teaspoon chili powder
1 cup frozen corn kernels
1/2 cup fat-free sour cream
salt and freshly ground pepper, to taste

directions

Combine the chicken, zucchini, broth, beans, onions, garlic, cumin, and chili powder in the crock pot. Cover and cook on high for 2-3 hours or until the chicken is cooked.

Stir in the corn and sour cream. Cook for 10 minutes longer or until heated through.

Season as desired with salt and pepper and serve hot.

    I usually don't do reviews, but this was so terrible, that I would feel guilty not letting other people know. I followed the recipe to the tee. The sauce was very runny and it had very little flavor. Cubes of chicken just don't work well, much better to be pulled. I had 1 bowl and gave another to my wife. I finished mine, because I felt like I had to. My wife had 2 spoonfuls and was done. Threw the rest of the leftovers down the garbage disposal. I'm still on the lookout for a decent White Bean Chicken Chili and while I haven't found a great one yet, I won't be using this one ever again. I would recommend you try another recipe as well.

    I used dry beans soaked overnight and this recipe was FAB!!!! I added serano chilies for a topping-kick and green onions!!! YUMMMM

    This white chili is great, you can add salsa, sour cream and mozzarella cheese to every bowl to give more flavor.

    I give this a 3 but only because I'm used to spicey chili. I had a recipe for white chili but lost it and needed one for the Superbowl! This one worked out very nice just needs some salt and pepper not much though, very good chili!! I recommend it and will use it again.
