What's the secret ingredient in these cakes? Pudding mix. It not only adds flavor but it gives the cake a richer, creamier texture. No one will know your secret ingredient!

1/4 pound margarine
12 ounces chocolate chips
1 cup chopped walnuts
12 ounces colored mini marshmallows
7 ounces grated coconut
Heat margarine and chocolate chips in the top pan of a double boiler over low heat, stirring occasionally, until melted and smooth. Cool slightly. Put marshmallows and nuts in a large bowl; stir in chocolate.
Tear five 9-inch sheets of waxed paper and sprinkle each generously with coconut. Divide dough into fifths and place each fifth on a sheet of waxed paper. Roll tightly into 2-inch diameter logs and refrigerate overnight.
Before serving, unwrap from waxed paper and cut into 1/2" slices.

These have been on my quick and easy Christmas baking/making list since 1979. Both of my boys ask for them every year, and now the grandsons love them! We have a coconut allergy in the family, so I roll the chocolate & marshmallow dough in powdered sugar.

Simple and delicious! All the instructions are there so I'm not sure what the other review was about unless it's been corrected since then. I used pecans instead of the walnuts though because that was what I had on hand.

My brother, who does not eat a lot of sweets, asks me to make these for him every year. We call them "Church Windows" in our house, and it has become a tradition for him.

I always look for new cookie recipes at Christmas to add to my old standby's for gifts for family and friends at Christmas. I found this recipe and tried it. It was a huge hit. Even my husband who doesn't care for coconut liked them. These cookies are easy to make and certainly add a lot of color to your cookie trays.

I have made this recipe without the coconut for over forty years. I usually shy away from a marshmallow and chocolate combination, but this so good, it is the exception. The cookies are a nice addition of color when you make up those cookie dishes to give as gifts. This year I am going to add the coconut. An old dog can learn new tricks!
