ingredients
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 cup buttermilk
2 large eggs
1/2 cup sugar
1/2 stick butter, melted and cooled
1 teaspoon vanilla extract
1 tablespoon sugar, for topping
directions
Heat oven to 375 degrees F. Spray 12 regular-size muffin cups with nonstick cooking spray or place 12 foil cupcakes liners on a cookie sheet.
In a 3 quart bowl, stir flour, baking powder, baking soda, spices and salt until blended. Pour over flour mixture and stir just until mixed.
Spoon into muffin cups or foil cupcake liners. Sprinkle with the sugar.
Bake 25-30 minutes or until tops are lightly browned and muffins are springy to the touch. Cool in pan 5 minutes before turning out onto wire rack.
