2 eggs, beaten
1/3 cup brown sugar
1/2 cup vegetable oil
1 cup applesauce
1/2 cup raisins
1 3/4 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 tablespoon ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon ground allspice
Preheat the oven to 400 degrees F. Grease a muffin tin or line with paper liners.
Combine the eggs, brown sugar, oil, applesauce, and raisins in a bowl and mix until combined.
In another bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, and allspice. Mix well with a fork.
Stir the flour mixture into the egg mixture, stirring until just combined (do not over mix).
Fill the muffin cups 3/4ths full with the muffin batter. Place the muffin tin in the oven and bake at 400 degrees F for 20-25 minutes, or until done.
Remove the muffin tin from the oven and let the muffins cool in the tin for 5 minutes. Remove the muffins from the tin and let cool on a wire rack.
Store the cooled muffins in an airtight container.
