Irish Muffins

Muffins don't get much more interesting than this. With a little whiskey and some coffee liqueur, these Irish muffins are both indulgent and delicious.

ingredients

2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup sugar
1 egg, beaten
1/3 cup butter, melted
1/2 cup heavy cream, unwhipped
1/4 cup Irish whiskey
1/4 cup coffee liqueur (e.g., Kahlua)

directions

Preheat oven to 400 degrees F. Line a muffin pan with paper liners.

Sift the flour, baking powder, salt, and sugar together into a large bowl. Stir in the egg, butter, heavy cream, whiskey, and Kahlua until just moistened (do not overmix).

Fill the muffin liners 3/4ths full with the batter. Bake at 400 degrees F for 20 minutes or until the tops bounce back when lightly pressed.

Let cool in the pan for 5 minutes then remove the muffins in the liners to a wire rack to cool completely. Store in an airtight container.
