This Italian cheese is so versatile that it can be used in both sweet and savory recipes from cheesecakes to lasagnas.


2 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup plain yogurt
1/4 cup butter, melted
1 large egg
1 tablespoon grated clementine peel
1 cup diced clementine
In a large bowl, sift together flour, sugar, baking powder, baking soda, and salt. Set aside.
In a medium bowl, stir together yogurt, melted butter, egg, grated peel and diced clementine. Pour mixture into flour mixture and stir just until combined.
Spoon batter into greased muffin tins, filling two-thirds full. Bake in 400 degrees F oven for 18 to 20 minutes, or until lightly browned.
Cool for 5 minutes before removing to a wire rack to finish cooling.
