ingredients
1 pound process cheese product, cut into cubes
1 can (15 ounce size) whole kernel corn, drained
1 can (15 ounce size) black beans, rinsed and drained
1 can (10 ounce size) Rotel tomatoes (original or mild)
1 cup milk
directions
Mix all ingredients in a 4-quart pan. Cook over medium low heat, stirring frequently until cheese is melted and soup is hot. Garnish with cilantro, if desired.

very quick and very good. I spiced it up somewhat by adding 1/2 cup salsa, onion powder and garlic. Just a hint of cumin and then some cilantro made all the difference. Crumble nachos on top and serve...Yum!!
