Nothing like a creamy spread of avocado to add to your sandwich especially when paired with juicy tomatoes, crispy sourdough bread, and savory roast chicken.
8 slices sourdough bread, toasted
2 tablespoons mayonnaise
2 avocados, mashed
8 slices purple onion
4 slices (1 ounce size) Monterey Jack or provolone cheese
8 slices cooked bacon
8 lettuce leaves
8 thin slices tomato
8 slices (1/4-inch thick) roasted chicken breast
1/8 teaspoon salt
1/8 teaspoon black pepper
Place the toasted bread slices on a work surface. Spread one side of each slice of bread with the mayonnaise.
Top half of the bread slices with mashed avocado, 2 onion slices, 1 slice of cheese, 2 slices bacon, 2 lettuce leaves, 2 slices of tomato, 2 slices of chicken, salt, and pepper.
Top with the remaining bread slices, mayonnaise-side down.
Cut the sandwiches in half diagonally and serve immediately.

Chicken and avocado are delicate flavors and the other ingredients tended to overpower them. If I make it again I will leave out some of the ingredients or look for flavors that enhance the title ingredients.
