Why use a boxed cake mix when it's so simple to make a delicious chocolate cake from scratch?
4 ounces unsweetened baking chocolate, broken into pieces
1/4 cup butter or margarine, softened
1 2/3 cup boiling water
2 1/3 cups flour
2 cups sugar
1/2 cup sour cream
2 eggs
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon vanilla extract
Heat oven to 350 degrees F. Grease and flour a 13x9 baking pan.
In a large mixer bowl, combine the chocolate, butter and water with a spoon, stir until chocolate is melted and mixture is smooth. Add flour, sugar, sour cream, eggs, baking soda, salt and vanilla; beat on low speed of electric mixer until smooth.
Pour batter into the prepared pan. Bake 35 to 40 minutes or until a wooden pick inserted in center comes out clean. Cool completely in pan on wire rack. Frost as desired.
