The simple combination of a box of chocolate cake mix and a can of diet cola result in a delicious (and lower calorie) cake. That's right, there are no eggs or oil in this cake. Hard to believe it only contains two ingredients yet yields such a perfect cake.

1 box (15-18 ounce size) chocolate cake mix
1 can (12 ounce size) diet coke

Preheat the oven to 350 degrees F (or the temperature listed on the package of cake mix). Grease a 9x9-inch baking dish or 9-inch round cake pan.

Pour the dry cake mix into a large bowl. While stirring, slowly pour the cola into the cake mix. Only stir enough to blend the ingredients.

Pour the cake batter into the prepared pan and bake at 350 degrees F for 23-28 minutes or as per baking directions on cake mix package. Do not overbake.

When cake is done, place the cake in the pan on a wire rack for 15 minutes. Remove the cake from the pan and cool completely on a rack before frosting with light or fat-free whipped topping (or other frosting as desired).

    I used diet cherry dr pepper with the chocolate cake mix - awesome flavor! Love how simple it is. The cake does turn out very light but that is in the name of the recipe afterall.

    Amazing! I needed a cake and had a mix but no eggs. I didn't think it would work but it did. The cake was very very light. Almost too light but not quite. If I hadn't frosted it I think it would have been too light (not dry but hard to eat because it was so airy). Maybe a little sour cream in the batter or something. Great cake in a pinch though!!

    What if the cake mix ask for milk?

    • You are not using the cake mix ingredient list from the package, only add the cola to the cake mix and then follow the baking instructions.

    This is definitely good if you have no eggs- but I made it with funfetti box cake mix and cream soda in a bundt cake pan- the family liked it but it was definitely sponge like-I topped it with sifted powered sugar and served with vanilla ice cream. I think it would be much better as a chocolate cake.

    This cake wasn't bad. I used a low sugar cake mix so maybe that's why I didn't "love" it. Can't beat how easy it is though. I'll try a different mix next time and maybe can rate it 5 stars then.
