Love cheesecake? Love chocolate cake? Now you don't have to pick just one. A chocolate cake layer is topped with a creamy layer of cheesecake, as cupcakes or a Bundt cake.
12 ounces cream cheese, softened
2 eggs
1 2/3 cup sugar
10 ounces semisweet chocolate chips
1 1/2 cup all-purpose flour, sifted
1/4 cup cocoa powder
1 teaspoon baking soda
1 teaspoon salt
1 cup water
1/3 cup oil
1 tablespoon vinegar
1 teaspoon vanilla extract
Preheat the oven to 350 degrees F. Line a muffin tin with paper cups or grease a Bundt pan.
Combine the cream cheese, eggs, and 2/3rds cup sugar in a mixing bowl. Beat on medium speed with an electric mixer until well combined. Stir the chocolate chips in by hand.
In another mixing bowl, combine the remaining sugar, flour, cocoa powder, baking soda, and salt. Mix well.
Add the water, oil, vinegar, and vanilla extract. Mix by hand or on medium speed with an electric mixer until smooth.
Fill the muffin cups 1/3 full with the chocolate batter. Top each with a dollop of the cream cheese mixture. If using a Bundt pan, fill the bottom of the pan with the chocolate batter then top with the cream cheese mixture, spreading it lightly over the chocolate layer.
Place the pan in the oven and bake at 350 degrees. Bake for 30-35 minutes for cupcakes or 40-45 minutes for a cake.
Remove the pan from the oven and let cool for 10 minutes. Then transfer the cupcakes to a wire rack to cool or turn the cake out from the Bundt pan onto a rack to cool.
