This Italian cheese is so versatile that it can be used in both sweet and savory recipes from cheesecakes to lasagnas.


1 1/4 cup boiling water
1 cup quick oatmeal
1/2 cup butter or margarine
1 cup packed brown sugar
1 cup granulated sugar
2 eggs
1 1/3 cup flour
1/2 teaspoon salt
1 teaspoon soda
1/2 teaspoon cinnamon
Topping
1 stick butter or margarine, melted
1 cup packed brown sugar
2 egg yolks
1 1/4 cup milk
1 can coconut
1 cup chopped pecans
Pour the boiling water over the oatmeal and set aside.
Cream butter and sugars, then add eggs. Stir in soaked oatmeal. Mix dry ingredients and add to creamed mixture.
Pour into a greased and floured 9- x 13-inch baking pan. Bake at 350 degrees F for about 1 hour.
Combine all topping ingredients. While cake is still hot, pour over cake. Put under broiler until coconut starts to turn. Cool and enjoy!
I made this cake for a church outing and put my name and phone number on the side of the pan so I could get my pan back. The following week I got 3 phone calls for the recipe.
