Western Bean Stew Recipe

Serves/Makes: 6
Ingredients:
2 cups dried pinto beans
1 ham bone
1 teaspoon salt
1/8 teaspoon hot pepper sauce (tabasco)
1/4 cup bacon fat or lard
1 large onion, chopped
1 clove garlic, chopped
4 medium tomatoes, chopped
OR
1 1/4 cup canned tomatoes
1/4 cup minced parsley
1/2 teaspoon ground marjoram
1 tablespoon chili powder
Directions:
Soak beans overnight.
Add ham bone, salt and hot pepper sauce. Bring to a boil. Reduce heat and simmer covered about 1 hour or until beans are tender. Drain beans and reserve liquid.
When beans are almost tender, heat bacon fat in a large skillet. Add onion and garlic and cook until golden. Add tomatoes, parsley, 1 cup of the reserved bean liquid, marjoram and chili powder. Taste and season to taste. Cook covered over low heat, stirring frequently for about 45 minutes.
Combine skillet contents with beans. Simmer covered over low heat 15 more minutes. Remove ham bone before serving.
