When it comes to Slavic cuisine, Bigos is definitely one of the most iconic and beloved dishes. This slow cooker version follows tradition with cabbage, sauerkraut, and a variety of meats.
1 pound cabbage, chopped
1 onion, chopped
1/2 pound mushrooms, sliced
2 tart apples, diced
1 quart sauerkraut, rinsed and drained
1 pound boneless pork butt, cut in 1-inch cubes
1 pound boneless veal, cut in 1-inch cubes
1/2 pound Polish sausage, sliced 1/2-inch thick
1 clove garlic, minced
2 tablespoons butter
1/2 cup beef stock
1 cup chopped tomatoes
1/2 cup pitted prunes
1 bay leaf
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup red wine
Add the cabbage, onion, mushrooms, apples, and sauerkraut to the crock pot. Place the pork, veal, and sausage on top. Add the remaining ingredients. Do not stir.
Cover the crock pot and cook on low for 4 hours then stir. Cover again and cook for 4 more hours or until the meat is tender.
Serve over spaetzle or hearty peasant bread.
