4 tablespoons oil
2 pounds lean lamb, cut in 3/4-inch cubes
1 onion, peeled and chopped
1 1/4 cup red wine
2/3 cup chicken stock
3 tomatoes, peeled and diced
2/3 cup cranberry sauce
1/2 teaspoon grated orange peel
1 teaspoon sugar, or to taste
salt and pepper, to taste
Heat the oil in a skillet over medium-high heat. Add the lamb, in batches if needed, and cook until browned. Remove the lamb with a slotted spoon and keep warm.
Add the onion to the skillet and cook, stirring frequently, until soft. Add the wine, chicken stock, and diced tomatoes. Bring to a boil. Return the lamb to the skillet and reduce the heat to a low simmer. Cook, stirring occasionally, for 45 minutes.
Add the cranberry sauce, orange peel, sugar, salt, and pepper. Cook, stirring occasionally, for 30 more minutes or until the lamb is tender.
