Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

I didn't find this recipe to be bland but maybe it was the sausage or beans I used. Easy recipe for sure!

Good tasting and filling meal all by itself. However, we like it with a little more kick so I added some brown sugar, chili powder, worchestshire sauce, pepper, smoked salt and a touch of hot sauce.

This recipe is hearty, but fairly bland. I will make it again, but add brown sugar or molasses to up the ante on flavor. Also, I think I will add some garlic.
