Ingredients:
1 pound chickpeas
1 pound white beans
1/2 chicken
5 liters water
1 black pudding
1 pound potatoes
1 pound pork meat
2 cups bread crumbs
2 eggs
2 teaspoons salt
2 cups pasta
1/3 cup rice
1/2 pound veal
1 veal bone
1/4 pound bacon
1/4 pound ham
2 carrots
1/2 small cabbage
1 small bunch chard
1 1/2 teaspoon pepper
3 cloves garlic
1 tablespoon chopped parsley
1/2 cup flour
1 tablespoon salt

Directions:

Soak chickpeas and white beans overnight. The next day place chicken and water to boil and when boiling add the peas and beans, discarding water used for soaking. Add the veal, bone, bacon and ham and boil slowly for a couple of hours or until tender. At the same time, mix the pork meat with bread crumbs, beaten eggs, salt, pepper, crushed garlic and parsley and make 15 little dumplings from mixture. Coat with flour.

Add the black pudding, potatoes, carrots, cabbage and chard to the stew and when liquid returns to the boil add the dumplings and season with salt. Boil for at least a further 45 minutes. Strain the broth and in it cook the pasta and rice for around 15 minutes.

The broth with pasta and rice should be served first, followed by the meat and vegetables.
